Oh my Potato!

Potatoes have long been the vegetable of choice for all but in the past few years it has also become the most popular (at least in my eyes) to experiment with.
For the festive season I tried my hand at potatoes with a rosemary butter.
The combination diminished the potato of its plain flavour, creating a lighter flavour that was delicious in the mouth when savoured.
I think that this is a recipe that could be so very versatile, try using your own favourite herb, mash it up with butter then pop in the potato, and voila! A lovely side dish to marvel at.
